How? “Lower your meat consumption and eat more fruit, vegetables and whole grains,” advised Lydia Chambers of the Garden Club.

“Reducing your consumption of meat minimizes the environmental impact of livestock production,” she explained. “Corn is a large part of the diet of the animals we eat; the corn is grown on vast farms and growing one crop consistently depletes soil and forces greater use of pesticides and fertilizers. Eating whole grains means less processing which decreases factory use and the production of greenhouse gases.”

She added, “Of course, buying organically raised foods cuts the use of synthetic fertilizers and pesticides that pollute waters and promote nutrient depletion of the soil. Buying from your farmers’ market provides you a higher nutrient food — but at the same time lowers fuel consumption and greenhouse gases.”
